WIAW – The Unemployed Edition

It’s been exactly one month since I got laid off. I can’t believe it. Time really flies. I’m not even sure what I’ve been doing with myself besides applying for every job that I think I’m either qualified for or not qualified for but sounds interesting. The trips to Florida and South Carolina have made the month pass quickly too.

Once I got over the whole “woe is me, why did this happen?” thing, one of the main things that I worried about was mindlessly eating all day since I was in the house with not much to do. I mean, one of the main things besides worrying about my lack of income. It’s been sort of surprise to me, but I find that I’m actually eating less than I was when I was in an office for 8 hours a day.

Here are yesterday’s eats. Breakfast was something that I used to eat all the freakin’ time but somehow fell out of rotation for a while. It sounds gross, but bear with me, it’s good. I swear.

Cottage Cheese Bowl
1/2-3/4 cup low fat cottage cheese
1 tbsp peanut butter
1/2 banana sliced
1/4 cup raw oats
stevia to taste

Mix it all up and this is what you have. I also do this with yogurt which doesn’t sound as gross for some reason.

Lunch was leftovers from Monday’s dinner. This picture is of the actual dinner and was plated much nicer than my leftovers in Tupperware but you get the gist. This is Mama Pea’s Curry in a Hurry
from her cookbook.

Afternoon snacks were pretty self-explanatory.

For dinner, we busted out Peas & Thank You again. I worked on the Thai Veggie Burgers (and subsequently burned them) while Jason made some baked potato rounds. I opted to eat my burger on a lettuce wrap so I could have more potatoes. Don’t be fooled, what you see on my plate here is not all I had. Those suckers were good. I’m not sure what he coated them with.

I think that part of the reason that I’m eating better at home is that when I was at my job, I was looking to food as boredom relief. I didn’t really have much that I could do to take a computer break besides eat a snack (it wasn’t a particularly friendly office, I couldn’t really go chat with anyone) so that’s what I did. Now I just have to figure out how not to do that when I’m employed again. Hopefully I won’t be so in need of boredom relief at my next job.

  1. I had the same surprise that I actually ate less at home. The office I worked in had tons of restaurant food coming into it to serve to clients who were at our facility all day and couldn’t leave. It was just too easy to order extra for ourselves and snack on all the junk food we kept around for clients too. Now, I forget to eat until I’m actually hungry, whereas at work I would get bored and go grab a bag of chips or a bite of takeout 20 times a day.

  2. I don’t think your breakfast sounds gross… but it does when I think about it yogurt. LOL!

Those burgers sound delish. I need to get Mama Pea’s book.

  3. Lee – what did you do before you were fired? I’ve only started reading in the last month.

  4. I am so glad you are finding eating at home not as bad as you thought. Like we were talking about, I thought it would be harder not to eat mindlessly but it is actually easier! I don’t eat out of boredom as much either!

  5. That oatmeal/cottage cheese bowl looks really good to me! But then, I love cottage cheese so maybe that’s why :-)

Interesting observation about your mindless eating pattern at work – it’s totally a boredom thing! 9 times out of 10, if I do mindlessly eat at work or at home, it’s only because I’m bored and NOT out of true hunger.

I really hope you find a job that leaves you NOT BORED (I’m in that camp right now, ugh) so you don’t have time to consider a mindless snack!

  6. Whenever I work from home, I am the opposite as you – I tend to eat more and just mindlessly snack! Oh also, I love cottage cheese so your breakfast sounds great to me!

  7. Wow, already a month? The time DOES fly! Either at work or at home, I’m a grazer, which is supposedly “good,” but what I graze is NOT so good!

  8. Maybe some ways to take a computer break at work could be like a quick lap around your office or building or a few yoga poses that are conducive to being done in work clothes, lol.

  9. Your breakfast looks good. I kinda think that plain yogurt and cottage cheese are similar: blank canvases awaiting decoration!

I really need to get Mama Pea’s book all her recipes look delicious!! Hmm if you need boredom relief, you could always read blogs or bring a book and read for a few minutes? And don’t worry I’m sure you will find a job soon!!

  10. I picked up Mama Pea’s cookbook recently, I really need to start making stuff out of it! And there is no way I could eat your cottage cheese bowl. There aren’t many foods I don’t like, but cottage cheese is definitely one of them. It’s a texture thing.

  11. Your breakfast doesn’t look gross to me! ;) I love mixing up random things! Also, I am obsessed with the Peas and Thank You Cookbook! Definitely one of my favorites!!

  12. I have to agree- the breakfast does not look/sound gross! It sounds pretty much like the overnight oats I make and am eating this very moment!
I have Mama Pea’s book too. I made a few recipes right when I got it, but haven’t in a while (which is usually what happens when I buy a new cookbook)… I should definitely dig it back out! Keep us posted on what you make out of it!

  13. The curry looks delicious! I am definitely making it soon!

  14. I love those Thai Burgers from Peas & Thank You – I don’t think I’ve had anything I haven’t loved from that cookbook, actually. Those potatoes do look yummy too!
