Back in the Kitchen

I wasn’t kidding about being tired last night. I was fast asleep by 9:30. It was pretty awesome. My legs were feeling a little sore this morning (a 9:15 pace 10K is pretty fast for me), so I opted to do some triceps and biceps at the gym instead of running or leg strength training. And then I took a nap. You know, the one that I didn’t get to take yesterday.

And then I cooked, finally. I don’t know what happened, but cooking went completely out the window for the past few weeks. But I’m back! Back with sweet potato burgers and brussels sprouts.

This sweet potato burger recipe seems to have taken Pinterest by storm. I have seen it everywhere. I changed the recipe a good bit though. I only used one can of beans, hummus instead of tahini (because I didn’t have any), doubled the flour and didn’t use panko. Oh and I baked them for about 25 minutes at 350 instead of pan frying them. So yeah, I pretty much completely changed the recipe.

The burgers were good, but they fell apart pretty easily (as the recipe said they would). Still pretty tasty though. I served them with brussels sprouts. The secret to good brussels, in my opinion, is to get them really seared, almost burnt.

Does a Pixar movie count as a cartoon? UP! If not, Beauty and the Beast.

An animator for Disney. That went well with the first question.

My computer.

Blue cheese.

5. What is you favorite sports team?
I’m not a big sports person. I’ll route for the Falcons or Redskins for football and the Braves or Orioles for baseball. Or the South Carolina Gamecocks because that’s where Jason went to college. (My school didn’t have a football team.)

6.Are you a Dog or Cat person?
Dog!

7. Do you have a favorite quote?
It’s a song lyric, but I’ve always liked:

8. What do you never leave home without?
Cell phone

9.Harry Potter or Twilight? (Or neither?)
Neither!

10. Do you have a pet peeve? If so, what is it?
I hate it when people add an “s” to store names that aren’t plural. The name of the store is not Barnes & Nobles.

11. If you could meet anyone, living or dead, famous or not, who would it be?
I have to get back to you on that one. Not sure.

  1. I have not seen the sweet potato burgers, but your version looks like something I want to try. The brussels are the ONLY way I will eat them. Well, that and with some bacon. And to think I used to hide them under my mashed potatoes as a kid.

  2. Hahaha you would hate living in philly…we add an extra s to most words, like “yous guys” and “anyways”…its a part of the local charm. And I’m not kidding about “yous”.

    Have you seen any of the Twilight movies? If you haven’t you should. I just saw my first (and second and third) in December and I liked them. Didn’t think I would- but they sucked me in. I saw the latest one on my birthday. (I haven’t seen any Harry Potter though)

    • I saw the first one….and fell asleep. I think I was just tired though. I actually read the first book too. While I thought the story was engrossing enough, I just couldn’t get past the bad writing.

  6. ha! I hate when people add extra letters to words like that too! too funny. I was exhausted last night too…can beat ya on that, in bed at 9 pm! and I didn’t even run a 10K ;-)

  7. Haha – I don’t think I’ve noticed when people add s to the end of names – it’s so funny to hear the little things that bug us. I shorten the names of everything, so I don’t think I’m guilty of that one. =)

    I’ve seen these burgers on pinterest too and they’ve intrigued me. It’s nice to hear someone’s opinion on them though, since it seems on Pinterest so many people just keep pinning without changing the words, so I never know if it’s that person I know saying something about the pinned item or it’s just the same text that’s been around the whole time! :-)

  9. I’m a “neither” on Harry Potter and Twilight too– haven’t read any of the books or seen any of the movies! Glad I’m not the only one :-)

  10. Those sweet potato burgers were AMAZING but frustrating. I should have tried baking them. I added an egg and used almond flour and changed a few other things as well but the next time I make them, I’m going to make sure I’m prepared to spend a lot of time in the kitchen.

    Working for Disney would be cool. Have you ever run a Disney race? Those sound like fun but I’ve yet to do one.

  12. Those burgers look great! It always feels good to get cooking again after a few weeks off, but if I’m busy home-cooked meals are usually one of the first things to go for me too.

  15. oh emmm geee. ditto on the blue cheese. the first (and only time) i had it was on this unassuming nice little salad from Panera. it shocked my senses and I will forever stick by my assessment of “blue cheese tastes like a fart in your mouth”.

  16. I had to comment again after re-reading your questions. Oh and I may totally steal the questions for myself. Anyway..WalmartS….it makes me twitchy. And I have family members who say that and it makes me want to throw something. I’ m the same way with Twilight/HP. I read the first Twilight but can’t tell you much about it. And I’m such a Beauty and the Beast fan. If I was hogtied and had to pick a Disney, it would be a toss up between that one and Lion King.
