Appetite is Back

Despite still having a slight head cold, I’m happy to report that I’m not sick anymore and I’ve had the appetite to prove it.  I have to admit, the no appetite thing really did do wonders for my weight loss.  Oh well, it was nice while it lasted.

Thought I felt crappy on Saturday night, I actually woke up in the mood for something other than cereal on Sunday morning and made pancakes.

Janetha’s Whole Wheat Yogurt Pancakes have become my go-to pancake recipe.  I always double it for the two of us and substitute applesauce instead of yogurt.  I guess I can’t call them yogurt pancakes in that case, can I?

And those veggies?  The ones that I didn’t use, well some of them were still fine, so I basically threw a bunch into some boxed veggie broth and called it soup.  It was actually pretty good, especially after I added Frank’s and later some vegetarian sausage that I forgot I had.

Though there was a frozen pizza in the freezer calling my name, I decided to make a cauliflower pizza crust instead.  This is the first recipe that I’ve seen for a cauliflower crust that didn’t contain a cup or more of cheese, so I really wanted to try it.

I saved some points by not using the olive oil at all.  I thought this was really good.  It didn’t stand up as well as normal pizza crust, and I definitely needed to eat it with a fork, but it was really delicious.

Also, can we talk about something here?  This is my work email, which is why Gmail looks strange, but I see something even stranger.  And I swear I was not googling that, though now everyone in my office thinks I was.

    Please try to keep the coffee outta your butt. It doesn’t work any faster when taken rectally. LOL!

  2. HHHMMM I’m guessing butt chugging coffee is not such a good thing. Good to know.

    I made cauliflower wraps before and I loved them! They were flexible and held together well. I haven’t tried the crust since I figured the cheese was an important part of the process.

  8. Glad to hear you have an appetite! I’ll have to look into that pizza crust recipe – I’ve tried and failed at the cauli crusts because I hate how much cheese they have, try to healthify them and ruin it. I also need to make them thicker I think. And the email is interesting. I prefer coffee in my mouth.

  11. LMAO!!!! I saw a commercial for that show “My Strange Addiction” and one of the episodes was a lady addicted to coffee enemas. WTF? She needs that article. hahaha Pancakes are my favorite post sick/Sunday breakfast. Glad you’re feeling better!
